ALEURONE Just below the surface of the grain (the part which constituite the bran) and before the granules of starch,one finds a hard layer of compact cell which cannot be mechanically attacked; the substance in this layer is called ALEURONE. At times defined as a protein, a lipoprotein, a mixture of sugars, lipids and mineral salts, this substance is in effect a fraction which guarantees that at a certain point in its embryonal development the wheat grows. Aleurone performs the function in plant which hormones perform in animals.Aleurone is an energy stimulant since numerous biochemical reactions take place in the presence of this protein-lipid mixture, consuming a great deal of energy and oxigen.
